Main research subjects: factors affecting properties of bovine milk quality; properties and utilization of ewe and goat milk in dairy products technology; precursors and aflatoxins in cow feed and milk; properties of meat emulsions and batters; factors determining quality characteristics of meat from various animal species, its ultrastructure and texture.
